
Plant based English scones
This recipe holds a cherished spot in my heart! I can't wait for you to fall in love with these fluffy treat, they are absolutely perfect for a spot of afternoon tea!
Ingredients
4 cups of plain or gluten free flour
2 tbs baking powder
1 tsp of salt
2 tbs coconut sugar
1/2 cup of cold plant based butter cut into small cubes ( Miyoko's plant butter recommended)
1 1/3 cup organic non GMO soy milk
1 tsp vanilla paste
3/4 cup raisins
Glaze
1/4 cup of Aquafaba
Coconut sugar to sprinkle
Directions
Sift the flour and baking powder into a large bowl
Add the sugar and salt and mix
Take the cubed cold butter and rub it into the flour mixture slowly until the flour looks like clumps of wet sand. Slowly and thoroughly is the key to light and fluffy scones!
Mix the vanilla paste into the soy milk and slowly add to the flour mixture. Mix with a spoon to start and then use your hands gently to combine and knned to bring the mixture together.
Add the raisins and mix gently - (don't worry if the dough is lumpy)
pre heat the oven to 425 degrees
place the dough in the fridge for 10 minutes to rest
line a baking sheet with parchment paper
roll the dough out on a lightly floured surface, aim for about 1 inch in thickness
use a 2 inch cookie cutter to cut out the scones
pop the cut out dough circles on to the cookie sheet
Brush the top with aquafaba, sprinkle with coconut sugar and bake for 20-25 mins
Enjoy with some whipped plant based cream and jam of choice!
